How to make Coconut Milk at home
I prefer to make my own coconut milk, and trust me it is sooooooooooo much nicer than anything you have ever tasted out of a can, especially freshly made. I love to use freshly made coconut milk in cauliflower norridge, caramel custard and coconut yogurt. I make mine in a Thermochef but if you don’t have to have one of these thermo contraptions you could also use a food processor. This is how I make mine.
How to make Coconut Milk
What you need:
2 cups shredded coconut
2 3/4 cups of boiling water
Thermomix or blender
strainer
large jug
nut straining bag
Method:
Put 2 cups shredded coconut into your thermo cooker or blender
Blitz for a few seconds to grind up the shredded coconut to resemble desiccated coconut. It’s important that you don’t do this for too long otherwise you will have the start of coconut butter!
Poor in boiling water
Mix on speed 5 for 2 minutes and let cool for about 2 hours
Mix on speed 5 again for 2 minutes
Poor mixture into a nut bag over a jug and squeeze
I sit the nut bag in a strainer over my jug to make it easier
You can use the wet pulp in recipes that call for coconut flour, alternatively you can dehydrate it and grind it up as coconut flour.
